Heat the oven to 350 F.
Mix apple slices, cinnamon, nutmeg, and allspice together; set aside.
Put butter in a deep oven proof skillet or other oven proof dish. Any 8x8" dish will work.
Put the skillet or baking dish in the oven for 3 to 4 minutes, or until the butter has melted. Don't let it brown.
Take the pan out of the oven; sprinkle brown sugar over the melted butter.
Place apple mixture evenly over brown sugar.
Whisk eggs, add milk and vanilla. Add in flour, white sugar, and salt.
Whisk until incorporated. A few lumps are okay.
Pour the batter over the apples into the hot pan.
Bake for 18-25 minutes, or until set and lightly brown around the edges.
Don't be alarmed, the pancake will start to sink once it is removed from the oven. Serve right away.
Notes
Serve the pancake right in the pan. Mix up 1/4 cup white sugar with 1 teaspoon cinnamon and sprinkle over the top of the pancake if desired. Serve with maple syrup if desired. You can add a few raisins to the apple mixture, or use a different fruit like pears, peaches, or even blueberries! Use your imagination! How about a tropical Dutch Baby with pineapple and coconut, or mango? See, the possibilities are endless! If you want to make it without the fruit, just grease a skillet or baking dish and add the batter. Bake about 20 minutes or until set and browned. Sprinkle with cinnamon sugar, powdered sugar and fruit on top. Serve with syrup. Please let me know about any Dutch Baby creations you come up with! I'd love to try them.
