Stamppot

Stamppot  is a classic Dutch dish, mostly served in the cold winter months. Feel free to substitute bacon or other types of sausage, it’ll be delicious no matter what.

Ingredients
  • 2 lb Potatoes
  • 1 med Onion, chopped
  • 1 lb Polish sausage or Kielbasa, smoked or fresh, sliced Or Dutch sausage if you are lucky enough to find some!
  • 1 bunch Endive, shredded You can use any hearty green, kale, mustard greens, cabbage
  • 1/4-1/2 cup Milk
  • 1/2 stick Butter

Instructions
  1. Peel the potatoes and boil them for 20 minutes or until soft.
  2. While they're cooking, fry the onions in a bit of oil, when they start to soften, add the sausage slices. Remove from pan, set aside.If there is a lot of fat, drain most of it off. Add in the greens and saute until softened.
  3. When the potatoes are done, drain them and mash them together with the butter and milk. Salt and pepper to taste, but keep in mind the saltiness of the sausage. Add in the greens. Mix.
  4. Put back on the stove and heat it over a low heat until warm. Place in a bowl and top with sausage and onion mixture.
Recipe Notes

Pass vinegar at the table.
