Homemade Indian Curry Powder
The Curry Powder can be as spicy as you like to make it. This is a basic curry powder and you can use this is any recipe that calls for “generic” curry powder.
Use to flavor meats, rice dishes, soups, sauces, or vegetables.
To make a paste for a rub on grilled or roasted meat, just mix equal parts curry powder with water and oil. 1:1:1 ratio. This way, you can make as much or as little as you need.
Spice It Your Way, for instance, if you really like cardamom, instead of only adding 1 tsp, add 2 teaspoons or more, and use less coriander or keep it the same. These two spices seem to distinguish the flavors between many spice blends you’ll see in different cultures all across Asia and Africa. Maybe you don’t like cumin, leave it out. If fenugreek rocks your boat, use more of that and less ginger, it’s entirely up to you. Experiment until you find the right mixture for you.
