The Best, Easy, Chia Pudding

I make this to resemble Chocolate Chip Ice  Cream. I boost the nutrition with Maca powder and Cocoa Nibs. The nibs are just like chocolate chips and the Maca gives it a malty flavor. Of course, these are optional.

This is my favorite bedtime snack. I have a small cup with Chamomile Tea before bed every night. You can enjoy chia pudding any time of day, even for breakfast!

I use some of my almond pulp to boost the nutrition and it makes it creamier, but you can omit it and it will still be delicious. Chia seeds are high in protein and Omega’s so this is a no brainer when you want something sweet, but don’t want to feel guilty about eating it!

Chia Pudding

Ingredients
  

  • 1 3/4 cups Almond Milk Use any plant milk you like
  • 1 tsp Vanilla extract Sub any flavored extract, Coconut, Mint, Strawberry are yummy!
  • 1/2 tsp Monk Fruit Sweetener Sub any kind of sweetener you have on hand. Adjust to your sweetness liking.
  • 1/3 cup Chia Seeds

Optional Add Ins

  • 3-4 tbsp Almond Pulp after straining optional
  • 1 tbsp Cocoa Nibs
  • 2 tsp Flavoring Powder Maca, Goji Berry, Elderberry, Dragonfruit as suggestions

Instructions
 

  • Using a whisk, mix the first three ingredients in a 2 cup ball jar or bowl and taste for sweetness. Add more if you like it sweeter. Add in your optional flavorings and mix again. Add chia seeds and mix really well, be sure to get if off the bottom and sides of your container.
  • Let sit for about one minute and mix again, be sure to stir up from the bottom and sides. Repeat this until the seeds stay in suspension and mixture begins to thicken. Usually two or three more times. Put the lid on it and refrigerate at least two hours. The longer the better. Enjoy! I like it with a dollop of whipped cream.

Notes

You can totally make this your own. I hardly ever make it the same way twice. Substitute any kind of flavoring and powder. I have used Dragon Fruit, Goji Berry, Blue Pea Flower, and Elderberry powders. These are totally optional as the flavor extract should give you enough flavoring. I don't have a substitute for the Cocoa Nibs though, as far as healthy anyway. Real chocolate chips are always an option! I have even whizzed up strawberries with the milk, using less milk, of course, and added strawberry extract for a 'Chocolate covered strawberry pudding"!
You can find lots of different powders, turmeric and beet just for starters. The ones mentioned are the ones I've tried and use regularly.
