Zoey's Banana Cupcakes
My Granddaughter, Zoey, and I developed this recipe to use up 2 ripe bananas and came up with Zoey's Banana Cupcakes. They are so good! We used a shortcut frosting from the store because of time restraints, but making your own cream cheese frosting would be even better! We made it fun and colored the frosting with spring colors.
Ingredients
Wet Ingredients
- 2 Small Bananas
- 2 Eggs
- 3/4 cup Sugar
- 2/3 cup Milk
- 1/4 cup Softened Butter
Dry Ingredients
- 1 1/4 cup Flour
- 1 1/2 tsp Baking Powder
- 1/2 tsp Salt
- 1 tsp Cinnamon
- 1/2 cup Cinnamon Chips
Frosting
- 1 Whipped Cream Cheese Frosting
Instructions
Preheat oven to 375F. Grease 12 muffin cups. Set aside.
Mix wet ingredients
- Mash bananas in bowl. Add in rest of wet ingredients. Mix with hand mixer until incorporated.
Add Dry Ingredients
- Add in all dry ingredients except cinnamon chips. Mix on medium speed 2 minutes until smooth and creamy. Add in cinnamon chips and mix. Fill muffin cups almost to the top with batter.
- Bake 20 minutes or until toothpick inserted in center comes out dry. Let cool completely, then frost. Store covered in fridge for up to 2 days.
