Simple Fattoush Salad

Ingredients
  

  • 2 Small pita breads, tosated, and torn into pieces
  • 1 Large English cucumber, finely diced
  • 2 cups Halved grape tomatoes
  • 1/2 Red onion, finely diced
  • 1/2 cup Chopped Italian parsley
  • 1/2 cup Chopped fresh mint
  • 2 tbsp Extra-virgin olive oil, or to taste
  • 1 tbsp Fresh lemon juice, or to taste
  • 1 tsp Ground sumac, or to taste
  • 1 Clove garlic, minced
  • Kosher salt and freshly ground black pepper, to taste
  • Crumbled feta cheese

Instructions
 

  • Combine vegetables and herbs in a bowl. Mix Olive oil and rest of ingredients except feta. Gently toss with vegetable mixture. mix in pita. Transfer to serving platter or bowl. Crumble feta cheese on top and serve.

Notes

Sumac is a fun spice to add to any dish from vegetables to a sprinkling on grilled meats. It's got a citrus kick and is one of the spices that make the spice mixture  Za'atar so special. It may be hard to find in a store except a Middle Eastern market, but you can find it here.
