Black Tea Cheese Puffs

These puffs are a cross between muffins and scones. They contain neither eggs nor added fat, but they actually rose and came out rather beautiful! If you use matcha green tea, you could make these for St. Patrick’s Day! They’d be awesome next to a traditional Corned Beef Dinner!

Black Tea Cheese Puffs

Makes about 20 small puffs. Best eaten immediately.

Ingredients
  

  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 tsp ground black tea leaves or matcha green tea
  • 1 cup grated sharp cheese I used a Parmesan, Romano and Asiago Mix
  • 1/2 tsp ground mustard
  • 1/4 tsp cayenne or black pepper

Instructions
 

  • Grease mini muffin pan.
  • Mix all in dry ingredients in a bowl. Stir in milk gently. Don't over mix. Divide into muffin cups evenly.
  • Bake at 375F for 10-15 minutes.
  • Serve with butter and/or jam. Great with soup!
  • You could mix in 1 tbsp of dry parsley flakes, or chives for more flavor.
